Mache Salad – Mache lettuce is highly nutritious, violet flowers are sweet, edible and tasty and walnut orange dressing – deliciously light and refreshing,

Mache salad or corn salad, also common name lamb’s lettuce is rich in vitamin B, C, iron, potassium and folic acid.
Violets – flowers and leaves are edible. Flowers are sweet and they can embellish desserts especially cakes.
Heart shape leaves are also edible and tasty.

Mache lettuce has a nuty slightly sweet flavour. The bright green leaves are thin, smooth and velvety. Mache lettuce pairs nicely with walnuts, red and yellow bell peppers, arugula, avocado, berries, and oranges. Mache leaves are very perishable so, use them immediately as they are best when fresh. Mache lettuce can be stored  in the refregerator for about 2 to 3 days.

Violets are so welcome in my garden. They are considered weed. The leaves and flowers are edible and medicinal. Violet can be used internally as a blood cleanser. It is often recommended for cough and bronchitis.Violet can be used also as a tonic for swollen lymph nodes.

Violet leaves contain a little bit of mucilage a soluble fiber which can lower cholesterol levels. They can be steamed or sauteed. The leaves are high in vitamin A, C and rutin.

We can enjoy violet leaves and flowers in salad, pesto, wraps, dips, pates and soups.

Mache Salad with Wild Blue Violets and Orange Pecan Dressing

  5 cups of mache lettuce

  10 pecans

1/2 avocado, peeled and pitted

1/2 cup of wild violet flowers

1. Place mache lettuce in a salad bowl and add avocado slices

2. Drizzle with orange pecan dressing.

3. Sprinkle with chopped  pecans and serve.

Orange Pecan Dressing

 1/2 cup of avocado oil or grapeseed oil

♥ 1 orange, freshly squeezed

 1/2 lime, freshly squeezed

 Coconut nectar to taste (1 tsp)

 1/2 tsp of mustard powder

 1/2 cup pecans

Himalayan salt to taste

1. Mix avocado oil, orange and lime juice in a small bowl

2. Add coconut nectar, mustard powder, and salt.

3. Mix pecans in a blender to get a powder consistency.

4. Add all the above ingredients to pecan powder and blend well.
