I love to entertain, especially during the holidays. So, here is one of my favourite appetizer. Creamy, or with texture, therefore perfect for simple celebrations. It is great on soups, salads, wraps, vegetable slices, as well as with crackers.

MACADAMIA NUTS – sweet and healthy

This is another healthy nut that I adore. Macadamia nut is a source of selenium, iron, calcium, potassium, phosphorus, carbohydrates and fibre. In addition, macadamias are also high in zinc which is the beauty mineral, and fat. Their fat contains over 80 percent beautifying monounsaturated fatty acids such as oleic acid (omega 9), which is a good fat. Oleic acid significantly reduces blood serum cholesterol levels as, it enhances the protective high-density lipoproteins and suppressing low-density lipoproteins.  Furthermore, according to the latest research macadamias contains also palmitoleic acid a monounsaturated fatty acids that acts as an antioxidant, preventing deterioration of cell membranes.

 

SUN-DRIED TOMATOESsweet and tasty

Drying tomatoes definitely brings out the natural sweetness. Sun-dried tomatoes give a strong and bold flavour to my Macadamia Sun-dried Tomato Spread.

In addition tomatoes are a source of vitamin C, E, Beta carotene, calcium, magnesium and lycopene, which has a cancer fighting properties. Furthermore, you can find sun-dried tomatoes in many health food stores. Also, you can make them at home.  

Nutritional Information of 1 cup sun-dried tomatoes: 139 calories, each serving contains 30 grams of carbohydrates and 6.6 g dietary fiber. In addition, a cup of sun-dried tomatoes also provides 7.6 grams of protein and 1.6 grams of fat.  

Sundried Tomato Spread

1 cup macadamia

1/2 lemon, freshly squeezed

4 garlic cloves

Pinch of Celtic sea salt

1/4 cup sun-dried tomatoes

1/4 cup filtered water

 

1. Soak sun-dried tomatoes for 4 hours.

2. Mix macadamia and water  in a food processor until smooth.

3. Add garlic, salt and sun-dried tomatoes until creamy.
