Vegan cream of celery soup with coconut milk. Great soup for lunch on the go; rich, fulfilling and satisfying. You can also serve this as the perfect beginning to your meal.

CELERY SOUP WITH PARSLEY  AND CREAMY COCONUT

Celery is an excellent blood cleanser, diuretic and laxative. It contains vitamin C, potassium, calcium, magnesium, silica, fibre and coumarins, anti-cancer compounds that may be beneficial in cancer prevention. Celery purifies the blood, helps neutralize acids in the body, freshens our breath and cleans the teeth. Particularly, drinking celery juice after exercise will replace lost electrolytes

YOUNG COCONUT

Young coconuts are harvested directly from the tree before they  mature. Inside of the coconut fruit is refreshing coconut water/juice and a soft “jelly” meat or coconut jelly. We can drink coconut water as it is a great source of electrolytes;  and a good dehydration drink very similar in composition to human plasma. Then we scrape off the tender coconut meat with the spoon for the recipe.

Coconut is a good source of protein, B complex, beta carotene and minerals, especially iodine, which is important for thyroid function.

GINGER

Ginger is a potent cancer fighter, good for prevention of heart disease, and an anti-inflammatory. It may help prevent migraine headaches.

Ginger is a root, and should be peeled before being used. It should be stored in a cool dry area. Fresh ginger can be wrapped in paper towels in the refrigerator for up to three weeks, and can also be frozen. Look for fresh ginger that is firm, not wrinkled, in grocery stores or organic markets.

Celery Soup with Parsley and Creamy Coconut

1 cup celery ribs, chopped

Pulp of 1 coconut or coconut milk

1 cup water

½ cup coconut water

1 clove of garlic, minced

Himalayan or Celtic salt to taste

1 tsp ginger, peeled and minced

½ lime, freshly squeezed

½ tsp curry powder

1. In a blender, process all ingredients until smooth and creamy.

2. Serve chilled.
