CREAMY KALE AVOCADO COCONUT SOUP

Kale’s nutrition is par excellence; it contains more calcium than milk! Kale is rich in iron, sulfur, vitamin C, beta-carotene, chlorophyll and calcium. It contains powerful anticancer compounds that protect against breast, lung and colon cancer. In addition, it has anti-viral and antibiotic properties. Moreover, kale has a cleansing effect on the body, and its high fibre content helps cleanse the intestinal tract. Kale has been used to treat constipation and arthritis. It  has antibiotic and antiviral properties, and its high fibre content helps cleanse the intestinal tract. Kale has a sweet and slightly bitter flavor. It can be used in salads, vegetable juices, soups, and can be steamed or stir-fried

Avocado smooth and creamy soups

Kale and avocado soup. Who doesn’t like avocado? I eat avocado every day! Did you know that avocado is a sweet fruit rich in vitamin E, beta carotene, B complex, folic acid, magnesium, iron, potassium and fiber. Furthermore, avocado contains monounsaturated fat, which helps maintain levels of good cholesterol in the body. It also nourishes the blood, nervous system and prevents constipation. In addition, avocado is very nourishing for the skin especially for dry skin. And, last but least, It is beneficial for collagen production. 

YOUNG COCONUT

Young coconuts are harvested directly from the tree before they  mature. Inside of the coconut fruit is refreshing coconut water/juice and a soft “jelly” meat or coconut jelly. We can drink coconut water as it is a great source of electrolytes;  and a good dehydration drink very similar in composition to human plasma. Then we scrape off the tender coconut meat with the spoon for the recipe.

Coconut is a good source of protein, B complex, beta carotene and minerals, especially iodine, which is important for thyroid function.

2 cups kale

1/2 avocado

1/2 lime, freshly squeezed

3 cloves of garlic

1/2 cup coconut milk

Pinch of Himalayan salt

Dash of turmeric

1. In a blender, process all ingredients until smooth and creamy.

2. Serve chilled.
