My vegan flaxseed crackers recipe are so filling, tasty and nutritious. I always have them on hand as I love to snack, and look for something crunchy and satisfying.

I make different varieties – spicy, sweet or savory. Raw crackers can have a long shelf life if you  dehydrate them properly. I am introducing you my favourite: Herbs de Provence Crackers. They are my bread substitute. You can eat them with apples or dip them in your favourite sauce. Crunchy, flavourful and filling! Herbs de Provence Crackers – raw vegan flaxseed crackers

2 cups almonds, soaked

3 ½ cups flax seeds, ground

½ cup extra virgin olive oil

1 tsp. Celtic salt or Himalayan salt

5 tbsp. Herbs de Provence, dry

5 cups or more filtered water

1. Soak almonds overnight.

2. Combine almonds, olive oil, Herbes de Provence, salt and water in a food processor until mixed thoroughly.

3. Place golden flaxseed powder in a bowl; add almond mixture and stir gently with a spatula until it is a thick paste.

4. Place teflex sheet onto dehydrator trays.

5. Spread the almond mixture evenly about ¼ inch thick onto teflex sheets.

6. Dehydrate at 145 F for 3 hours.

7. Remove the mixture from the teflex sheets and place the mixture back onto dehydrator trays.

8. Cut the mixture 2 inch by 2 inch with a spatula.

9. Dehydrate at 115 F for another 8 hours.

10. Store in air tight container in the refrigerator.
