This is one of my favourite dishes. The combination of avocado and beet adds a delightful blend of sweetness and creaminess to the perfect appetizer.

BEETS

Beets are a good source of phytonutrients called betalains. Betaine, the red pigment that gives beets their colour, provides antioxidant, anti-inflammatory and detoxification support. Beets contain beta-carotene, B complex, vitamin C, calcium, iron and manganese. They are blood cleansers and blood builders. They have been used to help with constipation and low blood sugar. Beets are especially beneficial for the health of colon, kidneys, liver and bladder. 

AVOCADO

Avocado is a sensual fruit, and a powerful stimulant and aphrodisiac. It is rich in essential fatty acids, vitamin E and B complex. Avocado is a traditional remedy for erectile dysfunction. It is also a good source of beta carotene, potassium and folate, nutrients good for circulation and the heart. Avocado contains monounsaturated fat that helps maintain levels of good cholesterol

OLIVES AND OLIVE OIL

Olives and olive oil are beautifying foods, high in vitamin E that erases fine lines and wrinkles. Olives are rich in protein and polyphenols, which are water soluble antioxidants with anti-fungal and anti-bacterial properties.Olive oil soothes the stomach and helps a congested lymphatic system and lungs.Olive oil greatly enhances salads and pates and also makes great snack foods.

Raw Beet Avocado Supreme

 3 small beets, peeled

 ½ avocado, peeled and pitted

 Celtic salt to taste

 1 tbsp. olive oil

 1 lemon, freshly squeezed

 1/4 tsp. ground cumin

1. Grate raw beet and season with a little bit of lime, salt and cumin.

2. Add avocado and sprinkle with olive oil to taste.
