MANGO

Mangos are an exotic tropical fruit with a sweet fragrance. Rich in pre-biotic dietary fibre, they strengthen the heart and provide energy and stamina. Mango has been found to protect against prostate, colon and breast cancers. It is an excellent source of beta carotene, alpha carotene, and beta-cryptoxanthin. It contains vitamin A, C and E, potassium and magnesium.

COCONUT MEAT

I must admit I am a coconut fanatic and this coconut orange pie is just divine. Coconuts digest easily and are used immediately for fuel and energy.

ALMONDS

Almonds are sweet, and low in acid. They contain protein, vitamin E, calcium, iron, magnesium, potassium and zinc. Almonds are anti-inflammatory and strengthen the nervous system.

I use them in my raw cakes, pies, cookies and homemade almond milk. Soak nuts and seeds for better digestibility and creamier texture. 

Mango Orange Pie

Crust

1 cup almonds, soaked

1/2 cup dates

1/4 cup coconut flakes

To make the crust:

1. Soak almonds overnight

2. Soak dates for 2 to 3 hours

3. In a food processor mix soaked almonds and dates

4. Add coconut flakes and mix throughly.

5. Form into a ball.

6. Line the pie pan with parchment paper.

7. Place the ball into the pie pan and gently press to form a crust.

Filling

1 mango, peeled and pitted

2 oranges, freshly squeezed

Agave nectar to taste

1 cup of raw cashews

Coconut water to taste

3 tbsp coconut oil, melted

1. Soak raw cashews for 4 hours

2. in a high powered blender mix soaked cashews and litlle bit of coconut water

3. Add orange juice, melted coconut oil, agave nectar, vanilla and the rest of coconut water.

4. Mix  all ingredients  until smooth and creamy. 

3. Transfer the filling into the pie shell. 

I’m ready! 

It is time to  rejuvenate my mind, body and soul from the inside out.
