Here is another soup that I love. Also, creamy, refreshing and healthy: Carrot Pear Soup.

 PEARS – juicy, wonderfully crisp, with a delicate sweet flavor

Pears are a member of the rose family of plants. Furthermore, they are diuretic and used to treat acidosis, constipation, indigestion, and hypertension. Pears contain beta-carotene, vitamin C, calcium, iron, iodine, and potassium. In addition, they are a good source of fibre and phytonutrients. Pears can be enjoyed in salads, smoothies, cakes, puddings and pies. Store ripe pears in the refrigerator

CARROTS sweet and anti-inflammatory

Carrots are one of the best body cleansers. They contain Beta-carotene, vitamin B, calcium, vitamin C, pectin and fibre. Carrots have anti-bacterial and anti-inflammatory properties. In addition, carrots can strengthen the liver, kidneys, lungs and digestive system. They are also important for eye health and vision.

CELERY – cleansing and detoxifying

Celery is excellent blood cleanser, diuretic and laxative. In addition, celery contains vitamin C, potassium, calcium, magnesium, silica, fibre and coumarins, anti-cancer compounds that may be beneficial in cancer prevention. Celery is also a blood purifier, helps neutralize acids in the body, freshens our breath and cleans the teeth. Particularly, drinking celery juice after exercise will replace lost electrolytes.

YOUNG COCONUT WATER – source of electrolytes

Young coconut water is also a great source of electrolytes, and is a good dehydration drink very similar in composition to human blood plasma.

Carrot Pear Soup

1 cup carrots

  ½ cup celery stalks

2 pears chopped

½ onion, chopped

Coconut water to taste

1 tsp coconut oil

1 lime, freshly squeezed

1 tsp thyme fresh

½ tsp paprika

½ tsp raw coconut nectar, optional

½ tsp Celtic salt

Pulp of 1 coconut or coconut milk

1. In a high power blender mix all ingredients until smooth and creamy. Sprinkle with red paprika
