Apple cinnamon cookies – These are my favourite breakfast cinnamon cookies; beautifying, low fat, high fiber, vegan dessert. Also, sweet without being too heavy. You can have them for breakfast or as a snack. Get more recipes in my book Sexy Fit & Fabulous

Also great for a school days. In addition, they are packed with nutrients, high fiber, beta-carotene and omega 3. I can eat them every day without gaining a pound!

CARROTS – deliciously sweet

Carrots are one of the best body cleansers. they are rich in Beta-carotene, vitamin B, calcium, vitamin C, pectin and fibre. They also have anti-bacterial and anti-inflammatory properties.

FLAXSEEDS  – 

We cannot forget flaxseeds. Flax has anti-cancer properties, and it contains fiber which is beneficial for intestinal tract and cardiovascular system. In addition, flaxseeds are rich in potassium, magnesium and boron; as well as, omega 3 and omega 6 fatty acids. I use flax seeds mostly in my homemade crackers!

APPLES – crisp, sweet and delicious

Apples contain malic and tartaric acid, which promote good digestion and cleanse the liver. In addition, they are rich in anti-inflammatory and anti-cancer phytonutrients such as flavonoids and polyphenols. Apples are also an excellent source of vitamin B, beta-carotene, vitamin C, and pectin, a soluble fibre that can help remove toxins from the body. Have at least an apple a day, preferably before noon on empty stomach.  

Apple Cinnamon Cookies

1 cup almonds (soaked overnight)

2 cups flaxseeds

2 cups carrot pulp

6 apples, peeled and cored

½ cup Medjol dates

1 tbsp vanilla powder

¼ cup coconut flakes

2 tbsp coconut oil

2 tbsp cinnamon powder

Pinch of Celtic salt

1. Soak Medjol dates for 4 hours.

2. Mix apples in a food processor until smooth

3. Combine the applesauce, carrot pulp and almonds in a bowl

4. Add also cinnamon, vanilla powder, coconut oil, coconut flakes, Medjol dates and pinch of salt

5. Mix flaxseed and water in a blender

6. Add flaxseed mixture to the applesauce and carrot pulp mixture

7. Measure mini rounds approximately half cup of the dough onto dehydrator trays

8. Dehydrate at 145 F for 2 hours, then flip, remove Teflex sheets and dehydrate for another 7 hours

 

How to make carrot pulp:

1. To make carrot pulp you need to juice carrots and use what is left over.

2. The pulp gives my cookies lighter texture
